Nobody fails at nutrition on Sunday. They fail on Wednesday at seven at night when the kid has practice, there is nothing thawed, and the fastest thing in the house is a menu on your phone.
Sheet pan chicken is the insurance policy against Wednesday. Forty minutes on a Sunday, most of which is the oven working while you do something else, and Wednesday stops being a decision. You already made it.
I am not going to pretend this is exciting food. It is reliable food, and reliable is what keeps a plan alive across a year. Exciting is the steak bowls. This is the foundation those sit on.
What You Need
- 2 lb boneless skinless chicken thighs (thighs, not breasts, and I will explain why)
- 1.5 lb baby potatoes, halved
- 1 lb broccoli florets
- 1 red onion, cut into wedges
- 3 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 2 tsp onion powder
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 lemon, halved
How To Run It
- Oven to 425. Hot. This is roasting, not baking. If your oven runs cool, 435.
- Potatoes get a head start. Toss the halved potatoes with a tablespoon of oil and a third of the spice mix. Spread them on the pan cut side down and give them fifteen minutes alone. Everything else cooks faster and this is why most sheet pan dinners come out with hard potatoes.
- Season the chicken while you wait. Thighs, remaining oil, remaining spice mix, hands in the bowl. Get every piece coated.
- Add the chicken and onion. Pull the pan, push potatoes to one side, lay the thighs down with space between them, scatter the onion wedges. Back in for fifteen.
- Broccoli last. Pull it again, add the broccoli around the edges with a little oil and salt. Final eight to ten minutes. The broccoli should have black tips. That is flavor, not a mistake.
- Lemon over everything. Squeeze both halves across the whole pan the second it comes out. This one move is the difference between meal prep that tastes like meal prep and food you look forward to.
- Portion while it is hot. Four containers, right now, before you get distracted. Prep that stays on the pan becomes tonight's dinner for four instead of four days of lunches.
Why Thighs Instead Of Breasts
Chicken breast is dry on day one and worse on day three. Thighs have enough fat to survive reheating, which is the entire point of meal prep. The macro difference is about four grams of fat per serving. You will actually eat the thighs on Thursday. That trade is not close.
Four Days, Four Different Meals
- Monday. Straight out of the container, hot sauce, done.
- Tuesday. Chop the chicken over greens with feta and a lemon vinaigrette.
- Wednesday. Warm tortillas, chopped chicken, the Greek yogurt sriracha sauce from the steak bowls.
- Thursday. Everything into a skillet with two eggs on top. Breakfast for dinner and nobody is upset about it.
Same pan of food, four meals that do not feel like the same meal. That is how you eat like this for a year instead of eleven days.
