For about two years I cooked twice every night. One dinner for me that hit my macros and one dinner for everyone else that they would actually eat. It was stupid, it took an hour, and by Thursday I was ordering food anyway.
This bowl is what killed that habit. It is one skillet, it is fast, and the garlic butter does enough work that nobody at the table is thinking about the fact that it is technically a healthy meal. Leo eats it. My mother eats it. It hits fifty two grams of protein.
The whole thing turns on two moves. Get the pan hotter than feels reasonable, and do not put the butter in until the steak is nearly done. Miss either one and you get gray meat and burnt garlic. Get them right and this becomes a weekly rotation meal.
What You Need
The steak
- 1.5 lb top sirloin, cut into 1 inch cubes
- 1 tbsp avocado oil
- 1 tsp kosher salt
- 1 tsp coarse black pepper
- 1 tsp smoked paprika
- 3 tbsp unsalted butter
- 5 cloves garlic, smashed and roughly chopped
- Small handful fresh parsley, chopped
The bowl
- 2 cups jasmine rice, cooked (or cauliflower rice to cut the carbs)
- 2 bell peppers, sliced thick
- 1 red onion, sliced thick
- 1 avocado, sliced
The sauce
- 1/2 cup nonfat Greek yogurt
- 1 tbsp sriracha, more if your house can take it
- Juice of half a lime
- Pinch of salt
How To Cook It
- Start the rice first. Everything else moves fast. If the rice is not going before you touch the steak you will be standing around with cooling meat.
- Dry the steak. Paper towel, both sides, seriously. Wet steak steams instead of searing and that is the number one reason home steak tastes like nothing. Then toss the cubes with salt, pepper, and paprika.
- Get the skillet screaming. Cast iron on high with the avocado oil until it just starts to shimmer and move like water. Give it a full three or four minutes. Patience here is the entire recipe.
- Sear in two batches. Crowd the pan and you steam it. Two minutes on the first side without touching it, then toss and go another ninety seconds. Pull it to a plate at medium rare because it keeps cooking. Repeat with batch two.
- Char the vegetables. Same pan, all that fond still in it. Peppers and onion, high heat, three minutes, barely stirring. You want black edges, not soft mush.
- Now the butter. Kill the heat. Add butter and garlic to the hot pan and let the residual heat do the work, about forty five seconds, stirring the whole time. The second garlic goes past golden it turns bitter and there is no fixing it.
- Bring it back together. Steak back in the pan, toss it through the garlic butter, hit it with the parsley.
- Build the bowl. Rice, peppers and onions, steak, avocado, sauce over the top. Eat it immediately.
Making It Work On A Real Night
Cook the rice on Sunday and this is a fifteen minute meal on a Tuesday. Cut the steak and slice the peppers in the morning while you are already in the kitchen making coffee and it is closer to ten.
If you are cutting calories, swap half the rice for cauliflower rice and use two tablespoons of butter instead of three. You land around 510 calories with the protein untouched. If you are trying to gain, add a second cup of rice and do not touch anything else.
Getting Your Kid To Eat It
Leo would not touch this the first time because the peppers were mixed in. Now I build his bowl with everything separated into its own corner and he eats every piece of it. Same food, different presentation. That is the whole trick and it is not worth fighting over.
Give him a job too. He is on rice duty and he takes it seriously. A kid who helped make the dinner argues about it a lot less.
